Lamb is sold whole animal:
$5.25/lb dressed weight
$45 processing fee
$0.60/lb custom cut and wrap fee paid to the butcher (subject to change according to the butcher)
$100 deposit required to reserve an animal
Meat is picked up directly from the butcher in the Metro Portland Area
Dressed weights range from 40-60 lbs for a whole animal. The price per pound of finished cuts averages between $9.00-$10.00/lb depending on whether you choose bone-in or boneless cuts (we personally recommend bone-in for more flavorful, juicy cuts. Plus you can use the bones for making savory stock, sauce, or gravy)
An average sized lamb will yield approximately 35 lbs of meat and include the following cuts:
Shoulder chops or roasts
Loin chops
Sirloin chops
Rib chops
Leg roasts (whole or half) or steaks
Shanks
Stew meat or ground burger
We raise Dorper/Katahdin cross sheep known for their naturally lean and mild-flavored meat. Lambs are raised naturally - outdoors on chemical-free pasture. We assure the highest quality care for our animals from birth to slaughter. Processing occurs on-farm to minimize handling and avoid stress from transport.
